In Adempimenti → Tassa di soggiorno (Tourist tax) enter the amount per person per night, the maximum taxed nights, the exemption age and the months it applies.
For exempt guests, enter the reason in the guest record.
The report, also as CSV, is what you need for your declaration to the municipality.
In ISTAT you'll find arrivals and nights by origin and the daily movement to report on your Region's statistics portal.
Done. The calculation uses the dates of birth of registered guests, so it is always up to date.
